Tips for a Stress-Free Thanksgiving!

Cooking Thanksgiving dinner this year?  It can be a daunting task, even for seasoned home cooks. But don’t panic! Keep things simple by ordering our prepped side dishes. Plus, we’ve got a few tips from our Executive Chef Thomas Ricci on how to keep the day stress-free.

1. Get organized!

To avoid a hectic day in the kitchen, organize your workspace before getting started. Make sure you have all of the tools you’ll need for each recipe, and use containers to pre-measure and hold key ingredients a few days before Thanksgiving. This simple step can save a lot of time!

2. Pre-bake your fruit pies.

Making a fruit pie this year with a top crust? Make it at your leisure during the week leading up to the big day, and pop it in the freezer! I prefer using a metal pie tin for this method, and I wrap the finished pie with several layers of plastic wrap, plus a layer of aluminum foil for extra protection from moisture. When you’re ready to bake, unwrap it and pop it in the oven. No need to defrost, just add 25-35 minutes of extra baking time.

3. The bird.

A typical brine includes 1 gallon of water, 1/2 cup of salt, and 1/4 cup of brown sugar for every 10 lbs of turkey. Be sure to brine it two days in advance so that you can air dry it overnight in your fridge before Thanksgiving. This allows the skin to get crispier. Be careful, the bird will release a lot of the water overnight, so have a deep roasting pan to hold it.
I prefer a dry brine for better flavor and a crispier skin. Use salt and basic spices like crushed bay leaves. You can add cracked coriander seed, orange zest… whatever spices you prefer! Just place it on generously and let sit for several days in the fridge. You can rub off any excess before roasting. Whichever method you use, be sure to baste regularly during roasting time!
